I’m excited about this week’s menu because we are having Meatloaf and Shepherd’s Pie, which I don’t make very often. I hope to take pictures and share more recipes from this week in the future!

Sunday: Roasted Chicken
Monday: Meatloaf
Tuesday: Nachos
Wednesday: Shepherd’s Pie

Friday: Homemade Pizza
Saturday: Taco Soup

Crock Pot Lasagna

My husband and I really like lasagna, but sometimes I just don’t have the time (or energy!) to make it. My aunt gave me a recipe similar to this, which I changed around a bit to fit our taste buds. It is a great quick and easy meal.

Crock Pot Lasagna

  • 1 lb. ground beef
  • 1 Tbsp. Italian Seasoning
  • 1 1/2 tsp. minced garlic
  • 1 jar spaghetti sauce
  • 1/2 c. water
  • 1 8 oz. box lasagna noodles
  • 1 16 oz. container Cottage cheese
  • 1 8 oz. bag shredded cheese (mozzarella is best)

In a medium bowl, mix together ground beef, seasonings, sauce and water. Spray slow cooker with cooking spray (I use olive oil spray). Layer ingredients in this order: noodles, sauce mixture, cottage cheese, shredded cheese. Repeat twice to make three layers. Cover and cook on low for about 5 hours.

How To Make Homemade Baby Food

Although my husband and I like to try use the baby-led method of first foods by letting our daughter eat what we are eating, sometimes it’s just not convenient.  There are day when our meal consists of food we aren’t ready to give her.  And there are some foods that she just has a difficult time eating unless it pureed a little first.

I have found the most nutritious and frugal way to have quick meals for her is to make homemade baby food.

It’s so simple!

My husband and I are planning to have our Date Night on Saturday and make one of our favorite recipes together after the baby goes to bed.  We are excited for the opportunity to spend some quality time together.
